Purchasing/Storage

Look for Baby Red beets that have a firm, undamaged body and bright color. Avoid adding extra water to the packaging as this will cause spoilage. Baby Red beets should be stored in an airtight container in the refrigerator crisper drawer with their tops removed. They will keep for up to two weeks when stored properly.

Preparing/Serving

Before preparation, Baby Red beets should be washed well to remove any dirt or debris. The skin can be peeled off with a vegetable peeler once the root has been cooked. For roasting, Baby Red beets can be cut into wedges and tossed with olive oil and salt before being placed in an oven at 375 degrees Fahrenheit and cooked until tender. To steam, the beets can be placed in a steamer basket over boiling water for 20-25 minutes or until tender. Baby Red beets can also be boiled with stems and leaves attached for 15-20 minutes. Once cooled, the tops can then easily be removed before serving. Baby Red beets are delicious served hot as a side dish or cold in salads. They can also be pickled or pureed into soups and sauces.
