Baby Gold beets are botanically classified as Beta vulgaris and area member of the Chenopodiaceae family, alongside other vegetables such as Swiss chard, spinach, and quinoa. The baby-sized root is commonly referred to as a “table beet”, due to its mild flavor and sweet taste. Baby Gold beets are a unique variety of the classic beet and can not be found in stores as often as red or golden beets.

Nutritional Value

Baby Gold Beets are an excellent source of dietary fiber, vitamin C, folate, potassium, iron and magnesium. The stem and leaves contain high amounts of Vitamin A, calcium and phosphorus. They also contain polyphenols, which are known for their antioxidant properties.

Storage

Baby Gold Beets can be stored in the refrigerator for up to two weeks. To store, wrap them loosely in a plastic bag and place them in the crisper drawer of the refrigerator. If purchasing baby gold beets with stems and leaves attached, it is best to remove the greens before storage. The greens are best used within one week of purchase.

Preparation

When preparing Baby Gold Beets, it is important to wear gloves or wash hands immediately after handling as they may stain skin and clothing. To prepare, rinse beets thoroughly under cold water. Trim the tops and stems off, leaving 1-2 inches on the root. Peel the beets using a vegetable peeler or paring knife. To prevent discoloration, submerge peeled beets in water until ready to cook. Baby Gold Beets can be boiled, roasted, steamed, sautéed and used in salads and other recipes. They are also delicious pickled or juiced! Enjoy!
