Baby corn is available year-round in canned form. When fresh, it has a peak season in the spring and summer.

Storage

Fresh Baby corn should be sealed in a plastic bag and stored in the refrigerator for up to 5 days. Canned Baby corn can be stored at room temperature for 1 year or more. It is best to refrigerate any opened canned goods for up to 3 days.

Usage

Baby corn can be used both raw and cooked, and it is commonly used in Asian cuisine. It can be stir-fried, boiled, steamed, deep-fried, and added to salads or soups. Baby corn pairs well with herbs such as basil, cilantro, mint, oregano, parsley, and thyme; vegetables including bell peppers, carrots, chilies, mushrooms, onions; and meats such as beef, chicken, pork, and shrimp. The cobs can also be pickled, canned, or cooked as a side dish with butter.
