Current Facts
Baby Iceberg lettuce, botanically classified as Lactuca sativa, is a miniature variety of traditional iceberg lettuce and belongs to the Asteraceae or daisy family. It is also known as crisphead or head lettuce. Baby Iceberg lettuce has a higher sugar content than larger heads, which gives it a sweeter flavor.
Nutritional Value
Baby Iceberg lettuce contains some vitamin C in addition to beta-carotene and dietary fiber. It also contains iron, calcium, magnesium and potassium.
Usage
Baby Iceberg lettuce can be used either cooked or raw in salads, sandwiches and wraps. To use raw, the leaves can be washed and torn into bite sized pieces. The leaves can also be grilled or sautéed and paired with other vegetables for a nutritious side dish. Baby Iceberg lettuce is often used as a garnish on burgers or pulled pork sandwiches. It can also be juiced to create a cooling, low calorie beverage.
Storage
Baby Iceberg lettuce should be stored in the refrigerator crisper in an airtight container or bag and can last up to two weeks when properly stored. For optimal freshness, use immediately after purchasing.
It is best to avoid washing before storing as it will shorten the shelf life significantly due to the high water content of the lettuce heads. When preparing, wash under cold running water and blot dry with a paper towel or salad spinner before serving. If the lettuce has been cut, it should be refrigerated and used as soon as possible.
To extend storage life, Baby Iceberg lettuce can be blanched in boiling water for 10-20 seconds then shocked immediately in an ice bath to stop cooking. After cooling, drain, wrap tightly in plastic wrap and store in the refrigerator for up to one week. The leaves can also be frozen by blanching and packing them into Ziploc bags before freezing for up to 3 months. When ready to use, thaw completely before draining off any excess water that may have accumulated during thawing.
Baby Iceberg lettuce is a great source of essential vitamins and minerals such as Vitamin A, K, C, B6 and Potassium. It is low in calories and fat, making it an excellent choice for anyone looking to improve their overall health. The mild flavor makes it a versatile addition to any meal or snack. So go ahead and enjoy the crunchy goodness of Baby Iceberg lettuce!
