Hungarian chile peppers are available summer through early fall.
Selection
Choose Hungarian chile peppers that are bright in color, firm, and have a glossy sheen. Avoid any with blemishes or soft spots.
Storage
Hungarian chile peppers should be stored unwashed in the refrigerator for up to two weeks. They may also be frozen, either whole or chopped, for up to six months. When freezing Hungarian chile peppers, blanch them first before storing.
Usage
Hungarian chile peppers are most often used as an ingredient in a variety of dishes including salads, salsa, stir-fries, pastas, sauces and stews. The spiciness level varies depending on variety so tasting is recommended prior to adding one into a recipe. The peppers can also be stuffed with a variety of fillings, roasted in the oven or on the grill, and frozen for longer term storage. Hungarian chile peppers are also pickled and used as condiments or snacks.
