Selection
Choose sprouts that are firm and plump with a creamy white to light yellow hue. Avoid any sprouts that are soft, wilted, or darkened in color as this may indicate spoilage.
Storage
Mung Bean sprouts should be stored in the refrigerator for no more than five days. Place them in an airtight container or plastic bag and make sure not to wash them until just before using. If needed, rinse the sprouts with cold water before consuming them raw. Cooked Mung Bean sprouts can be kept refrigerated for up to one week when stored in a sealed container.
Preparation
Mung Bean Sprout should be rinsed thoroughly prior to use in order to remove any dirt that may have collected on them. They can be eaten raw or cooked.
