Current Facts

Fava beans, botanically classified as Vicia faba, are an ancient legume belonging to the Fabaceae family. Fava beans have been cultivated since the Neolithic period and were commonly consumed by Ancient Greeks and Romans. The legume is also known as broad bean, horse bean, tick bean, Windsor bean, English bean, field bean, and tic bean. Fava beans are popular in Mediterranean, Middle Eastern, and Asian cuisines. The beans were also introduced to the United States by immigrants from Europe and have become an important part of Southern cooking.

Nutritional Value

Fava beans are an excellent source of protein, dietary fiber, B vitamins, iron, phosphorus, magnesium, and potassium. They’re also rich in folate, an essential nutrient for tissue growth during pregnancy. Fava beans contain a high amount of levodopa (L-DOPA), a natural anti-Parkinson’s drug which may improve mobility and reduce tremors associated with the condition.

Applications

Fava beans can be eaten raw or cooked. In some cultures, the beans are eaten in their pods before they’ve ripened or dried and ground into a flour for baking to create flatbreads and other baked goods. Fava beans can be steamed, boiled, sautéed, fried, or pureed into creamy main dishes, side dishes, salads, soups, stews, dips, and spreads. The beans can be paired with fresh herbs, spices, vegetables, nuts, and grains to create complex flavors.

When selecting Fava beans look for bright green pods that are firm and unblemished. Fava beans should also have a sweet pea-like aroma. Unripe Fava beans should be stored in the refrigerator for up to three days, while ripe Fava beans should be consumed within two days. Frozen and canned Fava beans can also be used in recipes and are a convenient way to enjoy the legume year-round.

Fava beans are a versatile legume with numerous uses in the kitchen. Whether you’re looking to add them to salads or soups, or even bake them into breads, Fava beans make a delicious and nutritious addition to any meal. As with any food, remember to enjoy Fava beans in moderation as part of a balanced diet.
