Selection/Storage
Choose tomatoes that are glossy, firm, and heavy for their size. Avoid those with a soft spot or blemish on the skin or overly hard ones. Store on the countertop at room temperature out of direct light and use within three to five days. If your tomatoes are still green when you purchase them, do not refrigerate as this will stop ripening. Instead, store in a paper bag in a warm place until they reach their desired shade of red before using or storing in the refrigerator. Once ripe tomatoes are refrigerated, they should be used within two to three days. For longer storage, try freezing them whole; just blanch for two minutes then plunge into cold water and allow to cool before removing the skin, and packing in freezer bags. When ready to use, thaw at room temperature or by running under cool water until needed.

Beefsteak tomatoes can be cooked or eaten raw and pair well with just about any dish. They are often used as a centerpiece for salads, burgers, sandwiches, pizzas, pastas, and sauces. It is best to remove the core before cutting up your tomato; you can do this with a sharp knife or spoon. To cook tomatoes without losing their shape and texture add them whole to dishes such as roasts or stews for flavor and moisture release throughout cooking. Tomatoes can also be grilled on skewers over an open flame for added smokiness. Enjoy beefsteak tomatoes raw in salads, salsas, and sandwiches or cut up as a snack.
