Selection

When selecting Red beets, look for firm specimens with bright, vibrant skin that are free from blemishes or signs of wilting. Avoid any beets with soft spots or deep grooves as they will not keep well. It is best to choose smaller beets as they tend to be more tender and have a milder flavor.

Storage

Fresh Red beets should be stored in the refrigerator, unwashed, in an airtight container for up to two weeks.

To extend their shelf-life, raw beets can also be kept in a cool place without direct sunlight or with temperatures not exceeding 10°C (50°F). Cooked beets can be stored in the refrigerator for up to five days. Beets should not be frozen as they will become mushy when thawed.

Preparation

Before cooking, Red beets should be washed and scrubbed with a vegetable brush to remove any dirt or debris from the skin. To reduce messiness, it is best to wear gloves while handling raw beets as the juice can stain your hands. The stems, root end, and any wilted leaves should be removed before cooking.

Red beets can be boiled, steamed, roasted, sautéed or eaten raw. When boiling or steaming, it is recommended to cook the beet whole with the skin on to prevent loss of color and flavor. To roast, wrap the beet in foil with a little bit of oil or butter and roast in the oven at 350°F for 45-60 minutes, or until tender. When sautéing, cut the beets into cubes and add to a hot pan with some oil or butter. Cook for 10-15 minutes until desired tenderness is reached. For raw beets, they can be julienned in salads or grated and served with a dressing of your choice.
