Selection/Storage

When selecting Red Belgian endive, select heads that are firm and crisp with no wilting or browning of its leaves. Store in the refrigerator crisper for up to two weeks. For longer storage, blanch the endive before freezing.

Nutritional Value

Red Belgian endive is an excellent source of dietary fiber and contains a fair amount of potassium, calcium and iron. It is also high in vitamins A and C and is low in calories.

Preparation

Red Belgian endive is usually served raw as an addition to salads or sandwiches, but it can be cooked as well. To reduce its slightly bitter flavor, blanching the leaves briefly before adding to recipes will mellow the flavor. It can also be grilled, braised or sautéed for a side dish. For something different, try adding Red Belgian endive to soups or stews to provide a pleasant crunch and flavor.

Serving Suggestions
