Storage

Fresh bicolor corn should be refrigerated in a plastic bag and can last up to two weeks. The ears can also be blanched, cut from the cob, and frozen for up to one year. Canned or processed bicolor corn is available year-round. Corn that is stored at room temperature will spoil quickly due to its high moisture content.

Uses

Bicolor corn is best suited for raw consumption, as its flavor is most vibrant when the kernels are crisp and fresh. The ears can be sliced off the cob and tossed into salads, stir-fried, steamed, boiled, grilled, or roasted. The ears may also be used as a topping on tacos and burritos, incorporated into salsas and guacamole, served as a side dish, or cooked down into a creamy corn soup. In addition to fresh applications, bicolor can also be used in baking and for making homemade ice cream. It is important to note that the kernels will become starchy when cooked for extended periods of time. Bicolor corn pairs well with tomatoes, avocados, peppers, zucchini, summer squash, onions, garlic, cilantro, lime juice, chili powder, cheese, and butter. The ears will keep for a couple of days when stored in the refrigerator.
