Seasons/Availability

Blue hubbard squash is available during the fall through early winter.

Selection

When selecting Blue hubbard squash, look for specimens with a hard rind, free from any soft spots or blemishes. The heavier the squash is for its size, more dense and flavorful the flesh will be.

Storage

Blue hubbard squash can be stored at room temperature for up to 3 months if kept in a cool and dry place. Once cut, wrap in plastic wrap and store in the refrigerator for up to five days. For longer storage, cook the squash by steaming or baking then freeze it in airtight containers or bags. The frozen cooked squash will last up to eight months.
