Selection

When selecting Boniato sweet potatoes, choose those that are firm, have smooth skin without blemishes or cuts, and feel heavy for their size. Avoid those with soft spots, bruises, or any signs of sprouting.

Storage

Boniato sweet potatoes can be stored in a cool and dark place for up to two weeks. The refrigerator is not recommended as it will cause the texture of the flesh to become hard. Once cooked, the potatoes should be consumed within three days.

Preparation/Uses

Before cooking with Boniato sweet potatoes it should be washed and dried thoroughly to remove dirt and debris from its skin. The potato can then be boiled, steamed, baked, fried, or roasted whole for thirty minutes to an hour. Boniato sweet potatoes are best enjoyed mashed with butter and cream or pureed into a creamy soup. They can also be sliced and added to salads or used as a topping for toast and tacos. Additionally, the cooked flesh of these potatoes can be mashed together with eggs, onions, herbs, and spices to form patties which are then fried until golden brown.

Boniato sweet potatoes are rich in dietary fiber, vitamins A and C, manganese, copper, potassium, iron as well as magnesium. They contain antioxidants that help prevent cell damage caused by free radicals. Additionally they provide anti-inflammatory benefits, which can help reduce swelling and pain.
