Applications
Orange cauliflower can be used in both raw and cooked applications. When raw, the florets can be chopped and tossed into salads, thinly sliced into slaws, blended into smoothies or dip, or served as a crudité platter with dips. When cooked, it can be roasted, boiled, steamed, sautéed, grilled, or stir-fried and served as a side dish. It can also be pureed into soups and sauces, blended into hummus, chopped and added to grain bowls, used in baked goods like muffins or breads, or stuffed with rice dishes. Orange cauliflower pairs well with herbs such as oregano, parsley, mint, thyme, rosemary, and garlic, cheeses like parmesan and feta, nuts such as walnuts and almonds, vinegars like white wine and balsamic, legumes including chickpeas and lentils, grains such as quinoa and farro, fruits such as apples and oranges, vegetables including onions and bell peppers. In addition to its culinary uses, orange cauliflower is also popularly used as a decorative ingredient for plating and charcuterie boards.
Storage
Unwashed, raw orange cauliflower should be stored in the refrigerator where it will keep fresh for up to one week. After washing, pat dry with paper towels and wrap loosely with plastic to minimize moisture loss before storing in the refrigerator. Cooked orange cauliflower should be stored in an airtight container and refrigerated where it will keep fresh for up to four days. Orange cauliflower can also be frozen for up to six months.
