Chicory endive is available year-round but its peak season is spring through summer.
Selection
When selecting chicory endive, look for heads that are light green with no yellowing or wilting. Avoid any head that appears to be slimy or has a strong odor.
Storage
Store chicory endive in the refrigerator crisper drawer wrapped loosely in plastic wrap; it will keep for several days. If you plan to use it the same day, store unwashed in a plastic bag until ready to use. After washing, pat dry with paper towels before storing or using.
Preparation
Chicory endive can be eaten raw or cooked. It is often used as a garnish, added to salads and lightly steamed. Before cooking it, slice off any discolored tips and core the head. To prepare for raw use, simply wash it in cold water and spin dry or pat dry with paper towels.
Nutrition
Chicory endive is an excellent source of dietary fiber and a good source of vitamins A, C, K, folate, manganese, thiamin, niacin and riboflavin. In addition, it is also a good source of calcium and potassium.
