Selection
When selecting frisee, look for bright green leaves that appear fresh and crisp with no signs of wilting or yellowing.
Storage
Frisee should be stored in the refrigerator wrapped in a damp paper towel to help preserve its moisture. It can be kept for up to 3 days.
Nutritional Value
Frisee is a good source of Vitamin A and contains small amounts of calcium, iron, folate, magnesium and potassium. It is also high in fiber.
Preparation/Serving
Frisee can be used as a salad green or cooked and served as a side dish. It pairs well with other bitter greens such as radicchio and endives, as well as sweet fruits like oranges and apples. When preparing frisee, rinse the leaves in cold water to remove any dirt. For salads, use a sharp knife to cut into small pieces or shred. To cook, steam or sauté for 3-4 minutes until just wilted. Frisee can also be served raw with a dressing of olive oil and lemon juice.

Frisee is commonly used in salads, as a side dish or cooked into soups or stews.
