Selection
When selecting Chinese Celery, look for crisp stalks and vibrant leaves with no wilting or discoloration. The stalk should be firm and round without any blemishes or signs of browning. Avoid those bunches with yellowed or slimy leaves as these are indications of age or improper handling.
Storage
Chinese Celery should be wrapped in a damp paper towel and stored in the refrigerator crisper for up to five days. The leaves can also be separated from the stalks and both can be blanched before freezing for up to six months. Fresh Chinese Celery is best used within one day of purchase.
Preparation
To prepare, rinse each stalk and leaf with cold water to remove dirt and any debris. Trim off the root ends of the stalks and discard any wilted or discolored leaves. Both the stalks and leaves can be added to salads, stir-fries, soups, marinades, sauces, curries, or pickled for an extended shelf life.
