Selection
Choose Chinese eggplants that are firm and have smooth, taut skin. Avoid those with bruises, discoloration or cuts on the surface. Smaller varieties tend to be more tender than larger ones.
Storage
Store whole Chinese eggplant in the refrigerator for up to five days. Wrap them loosely in a paper towel to help absorb moisture. Cooked eggplant can be stored in an airtight container in the refrigerator for up to 3 days.
