Red creamer potatoes are available year-round.
Selection/Storage
Choose potatoes that are firm, have smooth skin, and no signs of bruising or soft spots. Store in a cool, dry place for up to 2 weeks. Do not store in the refrigerator as this will cause them to lose their flavor and texture.
Nutritional Value
Red creamer potatoes are an excellent source of vitamin C, potassium, phosphorus, B vitamins (riboflavin and thiamin), magnesium, manganese, niacin, pantothenic acid and dietary fiber. They also provide some iron and zinc. In addition to providing carbohydrate energy for fuel, they contain phytonutrients such as carotenoids (provitamin A) and flavonoids which may offer antioxidant benefits.
Preparation
Red creamer potatoes should be washed and scrubbed gently under cold running water to remove any dirt or debris. They can be boiled, steamed, roasted, mashed, fried or sautéed. The thin skin will cook quickly and should not require peeling for most recipes.
