Delicata squash is available in the fall through early winter.

Selection/Storage

When selecting delicata squash, choose those that are firm and heavy for their size with no soft spots, blemishes, or wrinkles. The squash should also have a dull finish as opposed to a shiny one, which could indicate that it is not ripe. Delicata squash can be stored in a cool area for up to three months. Once cut, place the squash in an airtight container and store in the refrigerator for up to a week.

Preparation/Uses

Delicata squash is best when cooked as it softens the thin skin and brings out its sweetness. It can be roasted, steamed, boiled, sautéed, or stuffed. Its flavor pairs nicely with maple syrup, onions, garlic, olive oil, sage, thyme, bacon, and cream. Delicata squash can also be pureed and added to soups or mashed like a potato. Additionally it can be used in salads as well as side dishes.
