Eggplants are a rich source of antioxidants, fiber, vitamins B1, B6 and C as well as minerals such as magnesium and potassium. When selecting Eggplants look for ones that are glossy with no blemishes or bruises. Store in a cool dark place and use within 3-4 days.
Preparation/Serving
Eggplants can be cooked in several ways such as sautéed, fried, roasted and grilled. They can also be used in many dishes such as casseroles, pasta dishes or salads. Eggplants are also delicious when added to sauces for pastas, soups or curries. They can also be stuffed with a variety of fillings such as rice and vegetables.
