Selection/Storage
When selecting elephant garlic, choose large bulbs that have dry outer wrappers and no spots or soft spots. Avoid any bulbs with signs of sprouting or green shoots. To store, keep the bulb in a cool, dry location away from direct sunlight for up to two months. Elephant garlic can also be frozen for long-term storage. The cloves can also be peeled and frozen for up to six months.

Elephant garlic is a good source of vitamin C and other nutrients such as manganese, phosphorus, and selenium. It also contains allicin, which has antibacterial and antiviral properties.
