Selection
When selecting Purple fingerling potatoes, look for specimens that are firm, clean, and free of cracks, bruises, or blemishes. Avoid any potatoes that have soft spots or a greenish tinge as this is a sign of sun exposure which can make them bitter in taste.
Storage
Uncooked Purple fingerling potatoes should be stored in a cool and dry place away from direct sunlight. Once cooked they should be kept refrigerated and consumed within 3-4 days. If using for potato salads, it is best to dress immediately after cooking as the vivid purple pigment may fade when exposed to air over time.
Usage
Purple fingerling potatoes are best eaten boiled, roasted, or grilled. They can also be mashed and added to soups or used as an ingredient in potato salads. When boiling the potatoes, it is recommended to use a pot of cold water that has been seasoned with salt for optimal flavor. Roasting Purple fingerling potatoes takes approximately 25-30 minutes at 375°F (190°C) in a preheated oven. For grilling, the potatoes should be par-boiled first before being placed on a greased grill for 4-5 minutes per side until lightly charred and tender.
