Storage

Kennebec potatoes should be stored in a cool, dry place with temperatures between 35 and 40 degrees Fahrenheit. The humidity level should remain at 80 to 90% relative humidity, and the spuds should be placed in a ventilated container away from sunlight. They will keep for up to three months when properly stored. Cooked Kennebec potatoes can be stored in an air-tight container and kept refrigerated for up to five days. When freezing, cut the potatoes into cubes or wedges and blanch before freezing for up to six months. Uncooked Kennebec potatoes are not recommended for freezing as they develop off flavors and textures upon thawing.

Uses

Kennebec potatoes are best suited for cooked applications such as roasting, baking, mashing, frying, and boiling. The waxy flesh holds its shape and absorbs less water than other varieties, making them ideal for potato salads and chowders. They can also be thinly sliced for scalloped potatoes or cubed for soups and stews. Kennebec potatoes pair well with herbs such as thyme, rosemary, oregano, dill, parsley, sage, and chives; spices such as nutmeg, paprika garlic powder; cheese including cheddar and Parmesan; cream; bacon; onions; celery root; bell peppers; kale; cauliflower; apples; carrots; fish including salmon and tuna steak dishes. Additionally the tubers can be fried, mashed, roasted, boiled, or steamed. Kennebec potatoes are popularly used in French fries or as an accompaniment to steak and other meats. They are also commonly served at breakfast with eggs and bacon as hash browns. Beyond the kitchen, the potato can also be used to create a natural dye for fabrics and crafts.

Kennebec potatoes are an excellent source of vitamin C which is an antioxidant that helps protect cells from damage caused by free radicals. They contain several other vitamins and minerals including thiamin, folate, phosphorus, magnesium, potassium, copper, manganese, and iron.
