Leeks are available year-round with a peak season in the fall and through the spring.

Selection and Storage

When purchasing leeks, look for those that are firm with no signs of wilting. The leaves should be dark green and upright. Avoid any bulbs which have yellow leaves or blemishes. Store leeks in the refrigerator, wrapped loosely in a plastic bag, where they will keep up to two weeks. It’s best to use them within a few days for optimal flavor and texture.

Preparing Leeks

Leeks require washing since dirt often collects between their overlapping layers. To prepare them, first trim off the root end and discard the tough upper greens. Slice the white portion into rounds or half-moons before submerging them in water to rinse away any debris caught between the layers. Pat them dry with a paper towel before using in recipes. It’s best to cut the leeks into smaller pieces, regardless of whether they are being used raw or cooked.

Cooking

Leeks can be cooked in all sorts of ways and go well with many different ingredients. They can be simmered in soups and stews, roasted, sautéed, grilled, or baked in gratins. Their mild flavor pairs well with other vegetables such as potatoes, mushrooms, carrots and squash; starches like pasta and rice; proteins such as chicken and fish; and even fresh herbs like parsley or thyme. In addition to adding flavor to dishes, leeks are also a great way to add visual appeal with their vibrant green color.

Leek Storage

If you’re not planning to use your leeks right away, they can be stored in the refrigerator.
