Limes are available year-round.

Selection

When selecting limes, look for ones that are smooth and firm with glossy skin. Avoid limes that have any dark spots or signs of mold.

Storage

Limes should be stored in a cool, dry place away from direct light. They can also be kept in the refrigerator where they will last up to one month. If you need to store limes for longer than a month, freeze them either whole or as lime juice. To freeze lime wedges, arrange them on a parchment-lined baking sheet and place them in the freezer until solid before transferring them to an airtight container or resealable bag.

Once cut open, wrap the unused portion tightly in plastic wrap and store it in the refrigerator for up to one week. When it’s time to use the remaining limes, give them a quick rinse with water and pat them dry before using.

Using

Limes can be used in a variety of dishes from savory salads to sweet desserts. Add lime juice or zest to marinades, dressings, sauces and cocktails for a bright, tangy flavor. Limes are also commonly squeezed over tacos, grilled seafood and fruit salad. To get the most juice out of your limes, roll them between your hands on your countertop before cutting into them. If you’re looking for an extra burst of freshness in a dish, try adding some finely grated lime zest as a garnish!
