Don’t judge a mango by its color; green mangos can still be ripe and flavorful when ripe, and other less obvious signs such as aroma should also be taken into account when choosing one. Store Mangoes at room temperature until ripened; then refrigerate until ready to use. Ripe Mangoes can be stored in the refrigerator for several days.
