Selection
When selecting Italian parsley look for bright green stems and leaves that are free of wilting or yellowing. Avoid bunches with a lot of brown spots, as this indicates the herbs have been sitting out too long. The stems should be strong and leafy indicating its freshness.
Storage
Store Italian parsley in the refrigerator, loosely wrapped in a damp towel or plastic bag to help maintain moisture and freshness. It will keep up to one week when stored properly. If needed it can also be frozen either whole or chopped up, though the texture may not hold up as well during cooking. Parsley can also be dried by cutting off the stems and hanging them upside down until dry, then crushing them into a powder or storing them in an airtight container.
