Selection
When selecting fresh purple corn select cobs that are unblemished with bright and colorful husks. The kernels should be evenly distributed and full.
Storage
Fresh purple corn should be stored in a perforated plastic bag in the refrigerator and used within two to three days for optimum flavor and texture. Dried purple corn can be stored in a cool, dry place for up to six months.
Nutrition
Purple corn is low in calories and high in dietary fiber, containing vitamins A, B, C and E and minerals such as iron, zinc and magnesium. It also contains anthocyanins which are powerful antioxidants that can help reduce inflammation associated with chronic diseases.
Preparation
Fresh purple corn can be boiled, steamed, grilled or roasted. Dried purple corn can be used to make a variety of dishes such as soups and stews. It is also commonly ground into flour and used in baking applications. The kernels may also be popped like popcorn for a healthy snack.
