Russet Burbank potatoes are available year-round.

Selection

When selecting Russet Burbank potatoes, look for ones that are large and firm with a smooth, unblemished surface and no soft spots. Avoid any that have sprouts or green patches on the skin.

Storage

Store unwashed Russet Burbank potatoes in a cool, dark place with plenty of ventilation to promote airflow. Do not store them in the refrigerator as this will cause the starches to convert to sugar, resulting in an undesirable taste when cooked. If possible, use within one to two weeks for optimal flavor and texture. Potatoes can be stored in plastic bags for up to five weeks; however, their flavor may be slightly diminished by prolonged storage time.

Preparation

Russet Burbank potatoes can be boiled, baked, mashed, fried, or roasted. They are a popular choice for baking due to their fluffy texture and subtle flavor. To bake, scrub the skin with a brush and dry thoroughly before pricking several times with a fork. Rub the potato lightly with oil and seasonings such as salt, pepper, garlic powder, and herbs if desired. Place on an oven-safe pan or baking sheet lined with foil and bake at 375-400°F (190-204°C) until soft when pierced with a fork.

Nutrition

Russet Burbank potatoes are an excellent source of Vitamin C and potassium. They also contain moderate amounts of dietary fiber as well as iron, calcium, and magnesium.
