Selection
When purchasing Sun Dried Tomatoes, look for firm, pliable slices that are bright red in color. Avoid bruised or moldy tomatoes.
Storage
Store Sun Dried Tomatoes in an airtight container in a cool, dark place. Properly dried tomatoes will keep for up to one year and remain safe to eat after that time; however the flavor can degrade over time. When rehydrating, use warm water as cold water may cause the tomato to become tough before it is completely reconstituted. Do not soak longer than necessary as this may cause the tomato to become too soft or soggy. Once softened, store in the refrigerator for up to five days.

Sun Dried Tomatoes are a good source of vitamin C, potassium, and lycopene. They also contain fiber, folate, iron, magnesium, and phosphorus. Sun dried tomatoes provide the same nutritional benefits as fresh tomatoes but with an intensified flavor.
