When selecting Yuca, look for firm and unwrinkled roots with a fresh-looking exterior. Avoid Yuca that is soft to the touch, discolored, or has brown spots on its skin. The root should feel heavy in comparison to its size and have smooth texture.

Storage

Yuca can be stored at room temperature in a cool and dry location away from direct sunlight for up to 4 days. To extend the shelf life of Yuca, wrap the unfilled root in paper towels before placing it into an airtight container or bag and store it in the refrigerator where it will keep for 2 weeks. Once cooked, Yuca can also be frozen for up to 6 months. Cooked Yuca root can be stored in an airtight container for up to 4 days.
