Zucchini squash is  available year-round.

During the summer months, Zucchini is locally grown throughout much of the U.S., Mexico, Central America and South America. In cooler climates, Zucchini squash is generally available October through May. Its availability varies by region as some areas offer it year-round while other regions may have minimal availability during certain times of the year.

Storage/Handling

When selecting Zucchini at market look for ones that are firm and brightly colored with a glossy skin. Avoid any that are bruised or shriveled which can indicate age or improper handling. If harvested when mature up to six inches in length, Zucchini should be stored at room temperature for no longer than two days before using or refrigerating for up to one week. When refrigerating, wrap the squash in a loose plastic bag to prevent moisture loss. Zucchini is highly perishable and should be handled with care when preparing or storing.

Nutritional Value

Zucchini provides an excellent source of dietary fiber, vitamin C, potassium, magnesium and manganese as well as small amounts of iron, calcium and folate. It also contains several antioxidant compounds such as lutein and zeaxanthin which play important roles in vision health and prevention of eye diseases like macular degeneration.

Preparation/Serving Suggestions

When preparing Zucchini it can be best if washed thoroughly before consuming to remove any dirt or debris that may be clinging to its surface. Once washed, the skin can be left on or peeled off depending on preference. Zucchini can be steamed, boiled, stir-fried, sautéed or even grilled. It can also be used as a substitute for pasta and added to soups and stews. Young squash is especially enjoyable when served raw in salads or finely diced and tossed with other vegetables.
