Selection
When selecting White button mushrooms, look for specimens that are clean with dry, unblemished caps and a mild fresh smell. The stems should be white and firm without signs of darkening or discoloration. Avoid purchasing soft, slimy or shriveled mushrooms as these can indicate spoilage.
Storage
White button mushrooms should last up to four days when stored in the refrigerator. Place them in a paper bag to absorb excess moisture and store away from other produce items. For extended storage, they can be frozen for up to two months after being blanched for one minute. The texture will change slightly after freezing but they will still retain their flavor–just well cooked before serving.
Preparation
White button mushrooms should be washed briefly with cool water and a soft brush to remove any dirt or debris. If the stems are still attached, trim and discard them before cooking. They can be cooked in a variety of ways such as sautéing, roasting, grilling, or stuffing. White button mushrooms can also be enjoyed raw when sliced thin onto salads or used as toppings on sandwiches. When cooked properly, they will have an earthy flavor with a tender texture that is delicious paired with steaks, pastas, soups, and stews.
