Culinary Uses

Purple asparagus is a versatile ingredient that can be used in a variety of dishes. It can be eaten raw or cooked, and is often steamed, boiled, grilled, roasted, sautéed, stir-fried, or braised. Purple asparagus spears are delicious served chilled with vinaigrettes and sauces, blended into soups, pureed as part of a dip or spread, paired with creamy cheeses, cooked into pasta dishes and risottos, tossed in salads, and featured with sauces such as hollandaise. They can also be pickled for an extended shelf-life. Purple asparagus pairs well with many ingredients including eggs, poultry, beef, pork, fish, shellfish, garlic, onions, tomatoes, cheese, lemon juice, vinegar, and various herbs. They can also be used to make jam. It is recommended to store Purple asparagus in a sealed container or bag in the refrigerator for up to one week. The spears should be wrapped in moist paper towels for optimal freshness.

Nutritional Value

Purple asparagus is an excellent source of vitamins A, C, and K, as well as thiamin, riboflavin, niacin, folate, magnesium, phosphorus, potassium, zinc and dietary fiber. It also contains manganese and protein. Purple asparagus is low in calories and fat, and provides a good source of antioxidants.

Preparation

When selecting Purple asparagus, look for firm, bright spears with closed tips. Avoid limp or wilted spears that have excessive browning or discoloration. After purchasing the asparagus, it is important to use them as soon as possible for the best flavor. Before preparing Purple asparagus, trim about one inch off the bottom of the spears and peel away any tough skin. Once peeled, the spears can be eaten raw or cooked.

Cooking

Purple asparagus can be cooked using several methods including boiling, steaming, sautéing, roasting, grilling and stir-frying. To boil, bring a pot of salted water to a rolling boil and add the asparagus spears in a single layer. Simmer until just tender, about 3-4 minutes. Drain and serve immediately with melted butter or other sauces as desired.

To steam, insert the spears into a steamer basket set over boiling water. Cover the pot and steam for about 3-4 minutes until just tender. Drain and season with butter, lemon juice, or other desired sauces.

To sauté, heat oil in a skillet over medium-high heat and add the asparagus spears. Cook for approximately 5 minutes or until just tender. Season with salt and pepper and serve immediately.

To roast, preheat oven to 400°F and lightly coat asparagus spears with olive oil. Place on a baking sheet and roast for about 10-15 minutes or until tender. Remove from oven, season with salt and pepper and serve warm.

To grill, lightly coat the spears with olive oil and place onto a hot grill. Cook for approximately 5 minutes or until tender. Place onto a platter and season with salt, pepper and other desired spices.

To stir-fry, heat oil in a wok or large skillet over medium-high heat. Add the asparagus spears and cook until just tender, about 3-4 minutes. Remove from heat and season with desired sauces or seasonings.

Purple asparagus can also be eaten raw as part of salads or simply enjoyed on its own with a simple dressing such as olive oil, lemon juice, and salt. Enjoy!
