Red Dragon fruits are botanically classified as Hylocereus undatus and are members of the Cactaceae family. It is also known as Pitaya, bell fruit, or strawberry pear. Red Dragon fruit can be used in both sweet and savory preparations and should be eaten within one to two days after harvesting for the best flavor.

Storage

Refrigerate red dragon fruits immediately upon harvesting in a perforated plastic bag and use within two to three days for optimal flavor and texture. The flesh will become off-flavored if left at room temperature for too long. Red dragon fruit can also be peeled, seeded, sliced, diced, mashed or puréed and frozen on a cookie sheet or tray. Once frozen, transfer the pieces into a freezer-safe container and store in the freezer for up to six months. When ready to use, thaw overnight in the refrigerator before adding to any recipe.

Preparation

When selecting red dragon fruit, make sure that it is firm and plump with bright skin color. Avoid any fruits that have soft spots, blemishes or are overly ripe. To prepare for serving or eating raw, cut the dragon fruit in half lengthwise using a sharp knife and then scoop out the flesh with a spoon or melon baller. The seeds can be eaten as well; however they will provide no nutritional benefit due to their hard outer shell. Red dragon fruit can be added to smoothies, yogurt bowls or salads for a colorful and flavorful boost. It can also be blended and strained for making juices and sorbets. To preserve the fruit for later use, dice it into cubes, freeze on a baking sheet overnight in the freeze

Nutrition

Red dragon fruit is an excellent source of vitamins C & B3 as well as a good source of dietary fiber. It contains small amounts of phosphorus, calcium and magnesium too. The antioxidants present in red dragon fruit have been linked to protective properties against various ailments such as heart disease, cancer, diabetes and stroke. In addition, it provides essential minerals that help support healthy bones and teeth.
