Fresh Morel mushrooms are available for a short time in the spring. Dry Morels are available year-round.
Storage
Fresh Morel mushrooms should be stored in the refrigerator in a paper bag or between damp towels and used within 2-4 days. The dry version should be kept in an airtight container away from direct sunlight and will keep for up to 1 year.
Preparation
Morel mushrooms should be cleaned under cold running water, gently rubbing off any dirt with your hands while avoiding soaking them as this will cause the delicate mushroom to become soggy and fall apart. Before cooking, it is important to cut large morels in half lengthwise to check for insect infestation and remove any larvae found inside. Once cleaned, fresh Morel mushrooms can be cooked whole or sliced into thick rounds. When dried, they need to be soaked in warm water for 30 minutes, and then rinsed and drained before cooking.
Cooking
