Royal Trumpet mushrooms, botanically classified as Pleurotus eryngii, are also known under many other names including King Oyster Mushrooms, Eryngii Mushrooms and Truffle of the Poor. They are members of the Pleurotaceae family and native to Mediterranean regions in Europe, Asia, and Africa. The mushroom is commonly used in Italian cuisine as well as Asian stir-fries.

Preparation/Serving Suggestions

Royal Trumpet mushrooms can be served raw or cooked. If cooking with raw Royal Trumpets it is best to slice them into thinner pieces for even cooking. Popular methods of preparation include sautéing, grilling, baking or pickling. Serve them as a side dish or add into pastas, salads, soups or stews. The mushrooms pair well with herbs such as parsley and thyme, garlic, onion, tomatoes, and bell peppers. They can also be marinated in balsamic vinegar and olive oil for use in sandwiches or antipasto platters. To store keep fresh Royal Trumpets refrigerated in the original packaging up to three days.
